I have both, all clad stainless copper core and Made in non stick. Both are good my all clads are 13 yrs old but stainless so to be expected. The Made in I got for Xmas this year. Already the 12 inch which I use the most of,the pair I got is showing some minor surface scratches even though I only use silicone and wooden utensils. May just be the way it goes with coated pans, but the heft and feel of the All Clad is more substantial IMHO.

Demeyere has a lot more aluminum than both.

I presume we are talking about the regular SS lines?

I second this, and also, no rivets on the interior of the pan which is a plus. Also there is something about how the cooking surface is milled that I am not sure I can explain, but is putatively advantagous. Pretty much similar in price. I believe the line I have is the Industry line which is 5 ply. Just an FYI, their fry pans are French Skillet style, which I actually prefer.

Between madein and All-clad, I prefer the look of the All-clad, and I think it comes to temp a little quicker. I have a mix of AC D3 and Copper Core (more expensive, great looking, harder to keep looking pristine on the outside because of the "groove") and I would generally say go for D3 in All-Clad. My only Madein piece is a 3qt. saucier, which I have no problem with but don't love look/style of handle. No issue with how it cooks.

TLDR: I prefer Demeyere over both.

I was talking about the SS ones, I didn't think you wanted Aluminum in your cookware?

Have $750 to spend on a set, give your recommendation.

Aluminum cores are very common in cookware due to their very responsive conductivity (change temps very quickly).

Any decent cookware with SS cooking surface is going to have aluminum (and possibly copper if you want to jump up in price) in the core clad or sandwiched between outer and inner SS surfaces. The Al does not come into contact with the food.

Straight out SS is comparatively a very poor conductor, the cladding process is what made All-Clad revolutionary at the time.

Got ya, so Demeyere is better or just heats up quicker? Sometimes an easily heated cookware is worse due to being too sensitive and leads to burning.

The test video I found of it didn’t show much of what they did, if they are using it like a non stick, yeah it’s gonna suck. Got to treat it somewhat like a stainless to keep the nonstick going.

I didn't go for a set because I know what I actually use and none of the sets match what I needed, but my daily drivers are stainless clad from Made In. I have the 10" skillet, 12" skillet, 12" straight-sided frying pan w/ lid, and 2 qt and 5 qt sauciers w/ lids. I've only had them since Christmas, but so far I've found them very similar to the All-Clad my buddy has. I think his pans heat up faster, and also cool down faster. Construction feels solid, I like that the handles don't get hot, and I fully expect them to last the rest of my life. They're not much cheaper than All-Clad anymore though, especially when you don't buy the sets that are on sale and go for individual pieces.

If you ask me, it is a bit more responsive (probably splitting hairs), cooks extraordinarily evenly, and as I mentioned the welded handle having no rivets on the inside of the pans is a big plus for me. I also like the French Skillet shape better over the regular All-Clad fry pan shape.

The Demeyere pans I have are 5 ply, so even if it comes to temp a tad quicker, its not prone to scorching, burning, uneven cooking, etc. I'm gonna add that All-Clad D3 is also quite respoinsive and you really can't go wrong with it either. Cooks Ill consistently ranks the All-Clad D3 its top choice for SS skillet every year.

I'm gonna add that I don't love the idea of buying sets as inevitably there are some pieces that you don't get a lot of value out of. I have mix/match stuff, but we don't keep ours out on racks, its all in cabinets.

All-Clad has something called All-Clad VIP factory event where you can get "seconds" for less - sometimes it is simply damaged packaging, sometimes its the actual pan, but it tells you in the description. Search it up and sign up and its a good way to accumulate pieces for less if you are so inclined.

Amazon has a Demeyere store where they offer the Industry 5 line, which IMHO is the best value prop for that brand.

How many are you typically cooking for?

I would buy a 12" fry pan/skillet SS, 12" SS saute pan, 10" non-stick (I would buy anodized aluminum for my NS) for cooking eggs, 3.5 or 4qt sauce pan and 2 qt sauce pan w/ lids (both clad SS - def no need for non-stick) and a good sized pasta pot/stock pot - no need to spend a lot on this piece. That'll cover your bases.

I just put that together on Amazon with Demeyere for the SS stuff with a Scan Pan hard anodized non-stick skillet and it came to $759 without the large stock pot/pasta pot which you could def go cheaper on as no need to be clad up the sides, so pretty close to OP original budget. Hope this helps just to give you an idea.

I would also want a 12" black cast iron skillet and a 7qt enamaled dutch oven if you don't already have those.

Big Papi have really good advice above. Couldn’t be happier with my demeyere - I have pieces from both the Atlantis and industry 5 line.

I have a good amount of all-clad and it’s pretty good stuff but I prefer the demeyere by quite a bit.

I’m also a huge fan of Fissler Original Profi and Paderno Grand Gourmet.

$750? Are you high? Go to Sam's Club.

ETA: And what's with all this "heats up quicker" stuff? Is an extra ten seconds too much to ask for breakfast? An extra minute to boil water too much to ask?

I've had the Tramontina stainless 12pc set from Costco for since Christmas. More than pleased with them. $200.
