Advice needed on defrosted gator meat

I purchased 5 pounds of frozen gator meat last Saturday and let it defrost in the fridge. The center is still a little stiff. Planned on cooking 3 pounds in sauce piquante tonight and fry 2 pounds Saturday morning.

But Florida pussed out. Since the game might be postponed, I would like to save it for a few weeks.

Can I refreeze it raw, or do I have to cook it to refreeze? I probably will still cook sauce piquante tonight and freeze, but I want to refreeze the 2 pounds raw to fry.

Follow TIGRLEE's recommendation and kill a rabbit. I raise rabbits and damn they make the best tasting meat and gravy type of dish.

Gator in a sauce piquante is good if done right, but the done right part isn't from the gator...

I would not refreeze any raw meat. Once it thaws, even if only partially the bacteria (E-coli) begin to multiply. Refreezing doesn't kill them and when you thaw it again you run the risk of some significant food poisioning. Sorry my team ruined your party. Go ahead and cook it up and enjoy it anyway. Sounds delicious.

I agree with TIGRLEE and Steadyhands that rabbit is tasty. Might use it next year for Florida since they run scared like little bunnies.

CoachDon got out voted, and as a UK fan I know you have never eaten a gator and seldom beat them. But I like your aggressive spirit and will pull for your team over the gators.

PsychTiger made the best suggestion but I'm sure I would be prosecuted for a host of Fed laws. I'm also sure that some poor secretaries would get the package befor the a-hole AD.

Bengalbait scared me almost as much as the Tigers scared the gators.

But you seem to have our best interest in mind, and you do seem sorry. When I talk bad about the gators, and I will, I will not include you.

Now I need to go back to grocery to get extra ingredient for 5 pounds of sauce piquante.

I made some really good gator and pork sausage out of it , stuffed it ,then froze most of it for later.

planned on it for the Florida pussies. We would have spanked that arse.
