A hundred pounds of meat and forty lbs of pasta w/ the required trinity. Either that pots getting bigger or I'm getting older!! ??

Thanks! Sometimes you just have to cook what you're paid to or requested to. If they're gonna hate me for giving people what they want, I'm good with it.

Yes sir. Been filled a lot of times with a regular rice jambalaya. Pasta is what they wanted.

100 lbs of meat...40 lbs of spaghetti. It was a benefit to raise money. I prefer 3 lbs of meat to 1 lb of pasta/ rice but you work with what they give you.

No sir. I am a fan of your calculator. It's really a helluva guide for folks wanting to learn!! Shared it with a number of good cooks. We all agree...

That's a lot of meat....but I bet it was awesome. My recipe calls for 60 lbs of temple and 25 lbs of sausage. The problem with pastalaya is all the meat seems to end up at the bottom of the pot.

Thanks for that. It's just that I had someone email me a couple of days ago about doing a pastalaya for 200.

Yours looks great - I would eat it.

You're right. That pic was when I lifted the lid. Had to roll it to bring the meat up. Rice rolls much easier than spaghetti.
