Just returned from eating crawfish catered by Heads or Tails. Perfectly seasoned (and none of that sprinkled stuff) and cooked, and the crawfish were the biggest I’ve seen this year. After we ate, I took some time to introduce myself and meet the owner and operator, Dustin Clement. Such a down to earth and humble guy, and he really cared what we thought about the quality of the boil and that we enjoyed the crawfish. I was born and raised around crawfish fields in Vermillion Parish, and this guy knows what he’s doing. Also, I found out that on Saturday, May 18, he’s putting on another crawfish boil in Dallas. All you can eat. This guy deserves a plug, so check out Heads or Tails on Facebook. Thanks to the posters here who recommended Heads or Tails. You were spot on!

I wonder if this is a fire sale from the cancelled Celina Cajun fest from yesterday

They were supposed to do 5,000 lbs and it was cancelled and they were already setup and ready to sell.

Yep there taste is always consistent. He is a nice guy who is passionate and very humble.
