2016 Thanksgiving Turkey Before and After Thread

20 lb bird.
Wet brine.
Into oven at 6:45 am

Same deal for me, I'm doing the Alton brown recipe first 30 mins at 500 deg then drop it down to 350 deg.

Dry brine 48 hours in fridge to dry skin.

Lathered with unsalted butter & into 525*F oven for 20 minutes, lowered to, baste & repeat at 350*F until internal temperature of 155*F is achieved. Rest 30 minutes tented with foil then carve.

I'm doing the Brigsten's recipe. In the middle of making a roux, so I'll post pics after I'm done with that. Happy thanksgiving everyone.

For the gravy. It's so good I want to run to the store buy some of that Heinz gravy and eat mine as a soup tomorrow.

Yea, the gravy stole the show. It was worth the effort for sure.

Maybe 45 mins into smoking



After, I think total time was about 4 hours at 290ish degrees.... Wet brined as well

Gotcha, that was the first turkey I've smoked, even tied it turned out great!
