20 lb bird.
Wet brine.

Same deal for me, I'm doing the Alton brown recipe first 30 mins at 500 deg then drop it down to 350 deg.

Dry brine 48 hours in fridge to dry skin.
Lathered with unsalted butter & into 525*F oven for 20 minutes, lowered to, baste & repeat at 350*F until internal temperature of 155*F is achieved. Rest 30 minutes tented with foil then carve.

Gotcha, that was the first turkey I've smoked, even tied it turned out great!
