I wouldn't. With Romo out Williams doesn't have much value. Dez could miss almost the entire fantasy season. Amari could have a huge year.

His team is the worst 8 man team I have ever seen. That being said, if you can hit the playoffs without using Dez and get him back when it counts, I would do it. Other than that it seems like a lateral move

I wouldn't do it. You'd be taking a big gamble on the Dallas receivers. Is Williams going to have value with Wheeden at QB? Is Dez going to return sooner or later and when he does, will he be 100% or will he be hindered? When will Romo come back?

Cooper is looking like a solid WR2/3 and David Johnson could pretty easily turn into a RB2, IMO.
