What did we fix from week one and what broke week two?

Some of the things we did better were sticking with the run more, not letting the QB break contain with stupid spin moves or rushing too far in (though we got caught on a few designed roll outs after run fakes), and not playing much zone (and not sure if we played any off zone).
We also did a little better on secondary penalties though Browner had a horrible one and Spiller and more of Snead helped with our speed deficiencies on offense though Morgan should have seen some action.
Outside of the Browner penalty and the Breaux/Phillips deep ball mishap, the secondary played well. Still needs improvement but definitely on the right track.
Anthony and Kikaha are looking very good, and Edebali definitely needs more playing time. That's a ton of speed on the field and we need that.
Vaccaro and Phillips look good at safety, though Phillips took two bad angles/got over late when the defender in front let his man free on the Breaux play and on the last minute TD in the first half.
Jordan looks good but we need those other big guys to do something. Anything. They aren't rushing the passer, or stopping the run consistently. The pass rush is picking up (3 sacks and 4 qb hits; not sure how many pressures), but it's all from the outside or from blitzing.
The run game has been super spotty and I think it may be more of a play call issue/blocking. Most of the bad runs the HB is not getting any hole. I'm not noticing a lineman consistently missing a block so I'm leaning more toward play calling being the issue. It's the same thing we went through in 2013 for most of the year. It looked fixed last year but is broke again.
The pass blocking game one to game two was night and day. Strief in particular had a brutal day, though the edge pressure came from both sides at times. The middle was better but they still gave up some pressures also.
The receivers actually had a good day. 16 total catches between the four of them. But not playing Morgan is showing as the D has been compressing the field on both games. I also have a huge issue with Spiller only getting 1 target (a 19 yard catch). We have guys that can help stretch the field but didn't use them.
The TEs have been almost a non factor. Not sure if it's scheme but they were only targeted a combined 8 times (3 catches).
And then Hocker shite the bed. Way too early to give up on him but they missed kick was huge.
Defense definitely outplayed the offense once again (but was far from perfect), and it's hard for me to pinpoint whether more blame should be put on Payton's horrendous play calling or Brees taking too long on his reads and throwing poorly. That's been the two constants the first two weeks.

We abandoned the screen game for some reason despite constant pressure

Yeah it seemed like a semi reversal from last week where it was screen or look for the deep shot. This week it was intermediate passes or look for the deep shot.
If we can instead do screens/quick passes and intermediate, that will open up the deep shot. Calling better run play where the back doesn't get hit in the back field would also help (though we did better in the second half with that).
The play calling is definitely a huge factor in both losses.
