Standing rib roast price alert

alexanders market in BR, has them as follows

Select grade $6.99/lb

Choice. $9.99/lb

prime $16.99/lb

Trimmed, cut, and trussed

Just picked up a beautiful 4 rib prime one for Christmas day, butcher was very helpful

How much did you pay or how many pounds was yours? How many people are you feeding with that and what is your go to recipe? Just curious. I cook one every Christmas and have a larger than normal crowd.

I got a 4 rib, which came in at just under 8 pounds

You can pretty much figure 2 pounds per rib, and feed 2 people per rib, 7 ribs in a full rack, if you are getting a partial rack you can choose from the chuck end or the loin end, I always request the loin end

what is your go to recipe

as for technique, i keep it very simple and follow Martini's recipe - let come to room temp, season with salt and pepper, slather the cut ends with softened butter, place in a wire roasting rack over a roasting pan, put in 450 degree oven for 20 min, lower oven to 325 and cook to internal temp of 122 ish, take out let it rest at least 20 min and then slice

I have not tried but a lot of support lately for the reverse sear technique

Yes, the reverse sear has been getting a lot of praise. I have an oven technique whereby I cook the roast and then turn off (and keep closed) the oven for several hours - always perfect Prime Rib. I have never used my Weber Kettle rotisserie spit for a Prime rib or rib roast, but I am very tempted to give it a go this year. Thanks for sharing!

Thanks for this, I have never prepared one. Why the loin v chuck?

I bought a 4 rib USDA choice from Albertsons yesterday for $6.99/lb and cooked it last night.

Damn that looks amazing....what exactly is a rib roast? Is it basically a ribeye rack?

Neighbors cooked one last night from albertsons, it was pretty fricking good.. At 6.99 a lb, I may go buy one today.

No doubt. Fed 4 adults for about $35. I was running low on time so I got the primo to 300* and cooked it to an internal temp of 120*. I pulled it and foiled it while I opened up the primo. The internal temp rose to about 125* while waiting. I then seared all sides of the roast and pulled/foiled it to rest.
