I have used this setup with the game and have loved it:

My only problem I've ever had was using a scrolling wheel to adjust pitch trim wasn't really effective. I use an up/down button to adjust pitch trim.
I'm in the process of building a new PC to buy some high resolution texture packs and whatnot for this game.

A key piece is are you looking for a civilian yoke style or a joystick (aka fighter)
