Make some creamed spinach. It works just as well.

Artichoke Dip
4 8oz blocks cream cheese
1 wedge Romano Cheese
1 wedge Parmesan Cheese
1 jar Artichoke hearts (quartered)
1 medium can Diced Green Chilies
Shred or grate the block cheeses. Whip the cream cheese until spreadable. Blend the cheeses and add drained, quartered artichoke hearts, and entire can of chilies/juices. Mix. Turn into a baking dish suitable for serving. Bake at 350F for 20 minutes. Serve with tortilla chips.
No spinach in this, but it's good.

Sauté 1/2 cup of onions in 1 stick of butter. After add two boxes of chopped spinach (buy frozen them cook and strain) and cook on low heat. Add 8 oz of cream cheese, 8oz of sour cream, 3/4 cup Parmesan cheese, and 1 can if drained and then chopped artichoke hearts. Cook until it comes together. Add 8oz of Monterrey jack after you have removed the dip from heat- mix and melt.

I can eat this shite by the freaking boat load. Plus salty tostitos or chips is the other devil.
