Shrimp sauce piquante isn't terribly unhealthy.
Stock based Shrimp n corn soup.
BlackBean soup with roasted chicken light sour cream and Top with Fresh pico/cilantro.

For one soup, I'd do a black bean soup.
If you have dried black beans, then soak for at least a few hours and rinse.
Fine chop onions and saute in a bit of oil til transluscent. Add minced garlic and saute another minute. Add in carrots, celery and bell pepper. Saute til veggies are soft.
Add in black beans. (If using canned, add in the liquids from the can as well.) Add chicken stock, a pinch of salt, cayenne and a nice bit of chili powder.
Bring to a boil, then reduce to a simmer. Let it simmer til the beans are soft. Grab a potato masher or immersion blender and blend just a little, til about 1/3 the beans are mushed.
Salt and pepper to taste.
You could also dice up the chicken into about 1" cubes and saute and add to the soup just before the stock. Or saute the chickens w the onions in the first step.

I would do a chicken thing with the chicken and some of the veg. Use chicken stock and some noodles maybe.
Do a courtbouillon- style thing with the seafood.
