Opelousas chicken question

Don't laugh, I'm not much of a cook. I have a 5 lb. package of split breasts with ribs, thighs, and stripped back portions. I assume I can just season it all up and prepare according to the Opelousas chicken recipe? Any idea of how long of a cook time we are talking about? I really don't want to ruin a 5 lb package of chicken. Thanks!

Usually takes about 3- 3-1/2 hours @ 275 degree 5 lbs might take a little longer..
takes a while but thats what makes it good.
use a meat thermomter in the breast till about 170 degrees.
