I googled Huntsville BBQ and it turns out Big Bob Gibson's is original to neighboring Decatur, AL. They are well known for starting the whole white bbq sauce + chicken deal. I dont know if they created it or simply were the ones to make it well known.

They have a Dreamland location in Huntsville (Original is in Tuscaloosa).

So looks pretty ripe for someone to come in and leapfrog to the top of the bbq totem pole

One of the owners went to Alabama for college so there may be some type of connection.

If you are BBQ guy that’s been all over the South and Texas you will think Blue Oak is average. But for the random person in South LA, it’s pretty damn good. Especially their sides and specials. I went to several places in Memphis and I didn’t think anywhere was better than Blue Oak. That was not the case when I went Austin/Hill Country.

The wings are great. The mac & cheese and beans are also awesome. Sausage is grainy (aka not good,) brisket is okay.

Agree 100%. The BBQ there is good, but is just average if you want to compare it with the big players in Texas or Kansas City.

$13 for a pork sandwich??? No thanks, I'll stick to my local favorite Whitt's for a $3 sandwich. North Alabama has some very good BBQ joints that are very cheap compared to those prices. They will make it in Huntsville though, due to the huge population that has come in from all over America.

It's something different in New Orleans and has carved out a niche
But, I agree, if you've been to Austin and tried those places there's really no comparison

Agree. I mean, what does it say about you...as a BBQ joint...that your sides are considered the best thing there? Not your meat, your sides.

Gonzo's is hands down best smokery in the state. Would be a solid contender in Tx as well.
