For those that do a Gumbo, I've never used turkey before but will probably try it this year.

Any changes you make other than subbing the chicken with Turkey?

I'm thinking of making my regular gumbo sans chicken a couple days after thanksgiving and then just dumping some smoked turkey pieces in and letting it simmer for a while.

Layer the bottom of a casserole dish with dressing/stuffing. Then layer with chopped up turkey meat. Pour gravy over. Then top with a layer off mash potatoes. Bake 350 until top starts to brown 25-30 minutes.
