Jambalaya Calculator Question

Trying to get ingredient list for a 30 gallon pot. 80% desired fill.

on the ingredient list ... the section for quantity of water/stock says #N/A

Can anyone help me out with that?

No, I think you'd get mushy rice on a cook that big. I'd go 1.6 or 1.7 to 1 on the liquid to rice ratio.

I did'n go higher than 25 gallons on the JC because I wanted to be able to fit it all on a letter sized page. Also, I figured anyone cooking a pot that large would already know what they're doing on big pots.

ETA: If you're only doing an 80% fill, you are only making 24 gallons of jambalaya. Why not use the numbers for a 24 gallon pot at 100% fill level? That should work.

I'm not familiar with the JC, so I apologize if I offend...

For the best jambalaya rice, in my opinion, I use Zatarain's parboiled at a ratio of 3 parts rice to 4 parts liquid. It is fully cooked and is moist, but not mushy.

We have a 30 gallon pot for Football tailgates and I use 15 pounds of rice and eight (8) forty-eight (48) oz boxes of chicken broth. That fills the pot to about the 80-90% level.

Not sure about the calculator, but I use the following minimum ratios for every 1lb of rice:
--2lbs meat
--2 cups of chopped veggies

I can get the answer on the app for 80% of 30 gallons. Not sure if that's proprietary info though.

I didn't know that about the app. I'm not sure those numbers are OK at higher quantities.

Are you sure that's a 30 gallon pot? 15 pounds of rice and 3 gallons of stock or water assuming normal amounts of meat should not even be half full, especially with par boiled rice which doesn't pop.

SeasonOfSam, I tend to agree with this and the calculator confirms this. It says you only need a 14 gallon pot for 30 lbs meat and 15 lbs rice. 80% fill level
