Exactly what I've been doing for 25 years.

Because I usually fry a bunch for Thanksgiving, that's when I get new oil. Then I save it using the method quoted above and use it for Christmas, Super Bowl, Mardi Gras, Easter, any time I find an excuse to fry a turkey. Then I use it up frying chicken wings or what not through the summer. Start with a new batch next Thanksgiving.
