I do but I'll choose a mild sausage over andouille (stronger flavor that can take over the gumbo). My wife doesn't like it in her seafood gumbo so I'll alternate it in and out most times. But my Wild Dog gumbo gets everything...chicken, andouille, shrimp, oysters, crab and crawfish.

I prefer seafood gumbo sans sausage; however, it won't bother me enough to not enjoy it. I would agree that andouille can sometimes overpower other more delicate flavors, such as crabmeat. If using sausage, then a more mildly smoked, kielbasa-type would be my recommendation.

I will put a couple pounds of these in a seafood gumbo if my wife isn’t eating it. I like the flavor from the fat. But if she’s eating it is crab and shrimp and I put oysters in my bowl.
