I've done the experiment.

A roux made with 1 cup of flour and 1 cup of oil yields 1 1/3 cup of roux, plus a little unincorporated oil.

So you need 2 2/3 cup of jarred roux.

How long will homemade roux last in fridge before tossing, any ideas?
