Plus, Texans don’t know how to soak after boiling, and they pour the seasoning on top after boiling.

I see this a lot and it blows my mind. Not as much in Houston, but everyone did it in Austin. I jumped someones arse once for trying to pour seasoning on my crawfish after dumping them out. The poor guy didn't know any better, it's all he'd ever seen.

I’m not sure that’s a Houston thing and it seems most places have now abandoned that method in Louisiana. People were doing that in Louisiana over 20 years, at least. I think it was mostly restaurants and caterers that did it.
‘Steam’ rather than boil all the crawfish mild or medium seasoning, dust with seasoning to achieve other seasoning levels, usually in a cooler to trap the heat. As they cool they are supposed to suck in the seasoning. It baffled me when the did it but I understand why they would. I hate it, much prefer traditional boiled crawfish that I grew up with.
