I know you said you want to stay in the US, but here's a pitch for two non US destinations:
--Montreal; yes, it will be cold, but find a b&b or hotel with in room fireplaces, jaccuzi tubs, heated pool/sauna, and buy a nice warm parka.
--Munich & Salzburg: the Christmas markets start the Saturday after Thanksgiving Thursday, so if you can fly later in the week, you'll get some magical Christkindmarkt experiences. Everyone goes out into the streets, drinks mulled wine & punsch, and generally has a good time...every night of the week until Christmas. It won't be snowy yet, but cold enough to need an overcoat. Great weather for enjoying hearty Bavarian food & hanging out in indoor beer halls.
So back to the US: Napa/Sonoma is a great choice, except that everything's burning to a crisp right now. Things should be okay by next year, but you'll be looking at lots of fire-scarred landscapes. But SF itself has plenty of food, sights, and cool stuff to keep you entertained for a week, even if you don't make it to Napa. The drive to Big Sur is amazing, though a key bridge & sections of highway 1 are still out so you can't do the full drive.
How about New York City? Not too cold, an endless array of things to do/see/eat, and a huge variety of hotels/amenities.
