Butter used in baking is why you have the two butters, other than the fact of salt and blood pressure. My wife bakes and several of her recipes call for unsalted. Why? I haven't a clue. I just eat what she bakes without question.

Also, salt is a preservative, so the shelf life of salted butter is longer.

If you're baking something sweet, especially if it only has a handful of ingredients to go along with the butter, you want unsalted. It makes a difference in the taste.
