this is why I went with an enclosed aluminum stand. at cook-offs I'm sitting back watching my pot do its thing while others are flipping tables on their sides to block the wind.

the other good thing about the aluminum is it so damn light. ive fooled with big steel stands on wheels and you need 2 guys to get them in and out of the truck bed.

I can handle all the set up on my own with my 15 gallon pot. also of note, my stand can fit up to a 25 gal pot on it

Where did you get your setup from?

I thought I read that the banjo style burners are better for jambalaya pots.
