I thought about white beans but I am going to be serving out of my truck basically and don't want to have to carry a burner to warm them up.
I would rather poboy bread myself but some are asking for hushpuppies. I am cooking so I bet it's Leidenheimers since the seafood market close to me carries it!

I have two of these which I highly recommend. Only thing is you probably want one on a stand. I put concert blocks under them

Don't do white beans. Slaw, Potato Salad and Hushpuppies. Maybe you can sub fries for potato salad. Also get at least a half gallon of oysters for 30 people if not a whole. A gallon typically weighs 4-5 pounds drained.
