re: frying seafood for 30 folks--what says the F&D broad do I need--

When I fry seafood at my its roughly 1/2 lb per person plus fixins. I'd do white beans and rice in the place of potato salad.

For 30 adults

10 lbs fish
6 lbs shrimp
1 quart oysters
3 lbs dry white beans
5 cups raw rice
2 16 oz packages coles slaw
4 loafs of french bread

I thought about white beans but I am going to be serving out of my truck basically and don't want to have to carry a burner to warm them up.

I would rather poboy bread myself but some are asking for hushpuppies. I am cooking so I bet it's Leidenheimers since the seafood market close to me carries it!
