My thought is a total of 5-7oz per person. 40% fish, 40% shrimp and 20% oysters. I find more people eat fish and shrimp than oysters.
Shrimp are a little tricky because you buy it head on and in the shell. My guess is you loose 30% by weight to prepare them for frying.

I just want to know where to get good tasting oysters for frying. I've tried the shite ones that are shucked and come in the plastic containers at the grocery store and they taste terrible.
