Orlando late July with kids (ages 7 and 4)

Just found out my husband has a work function in Orlando late July and can take us with him. Hotel and meals covered by company All we would have to pay is flights for our kids and myself. I see spirit has cheap flights ($120)
We are not Disney fans and our oldest has only been once but too young to remember it. It was a forced huge family trip.
Is it even possible to plan this late to take them to magic kingdom for a day? Or is there anywhere better I can take them that is worth it? Again, my husband and I don't like Disney at all but I would go for my kids. They are not huge Disney fans either but they like a few of the new characters. Never cared about Minnie or Mickey or the classic characters.
If not, well just stay home.

Yes you can. Non resort guests cant book FP+ till 30 days in advance.
Disney can certainly be done in one day with this short notice but so can alot of other things? What about Aquatica?

If you haven't been, it's not a bad drive to Kennedy Space Center as well. Probably not the best place for a 4 year old though. Do the beach when you are out there as well.
Legoland, basically the old cypress gardens with legos.
You can do the Magic Kingdom without any advanced reservations, especially if you are going for just a day. Disney doesn't have to be a planning nightmare if you are just going to check things out and just have the understanding you won't be able to do everything you want and eat wherever you want. Half my trips there are when we get bored with family and decide to do a day in one of the parks in Orlando the night before.
A lot of people who have a bad time there, just drive themselves crazy by trying to run around the park. Just enjoy the time and don't be in a rush. Pick a few things you want to do and do what you can in between that.

Show your kids pictures and videos online of Disney World, Universal, Sea World and Lego Land and see which one they would prefer. Could also look at the water parks at Disney or even the new one at Universal.
Orlando in late July can be miserable though and plan for a 1-2 hr afternoon rain storm.

What's wrong with it? Husband just flew to Orlando and back yesterday for work and had no problems.

He had no problems this time. If I booked Disney tickets and was on somewhat of a tight schedule, Spirit would be the last airline I fly. They had to get an injunction last month to stop pilots from engaging in their work slowdown. Something like 300 flights had to be cancelled.
Work slowdown notwithstanding, Spirit consistently is rated the worst airline for delayed or cancelled flights.

My family really enjoys Disney, and I think your kids are the perfect age for it, so I'd give it a yes.
Islands of Adventure would be fun at their ages too. Also, Sea World or Legoland.
ETA: Sorry, I missed the part where you said one day so I deleted a lot of my post. I still think you can have a lot of fun. I didn't check for 1 day tickets but you might find discounted tickets here to help you decide Undercover Tourist

1 day tickets are actually more expensive on Undercover Tourist than the gate price.

Those are great ages for kids there. I would not do Magic Kingdom in the summer on a weekend, so if you will be there on a Tuesday through Friday that would be a great thing to do. Mondays at MK are supposed to be packed too.
Also, definitely consider Animal Kingdom or Hollywood studios there are tons of shows there where Fast passes are pretty much pointless, plus the big things to Fastpass are the roller coasters, tower of terror, etc that are not fit for little kids so you wouldn't have to worry about your planning either.
But yeah, as said only getting 1 day tickets are the most expensive by far. You get price drops after 2 days that are in half or more.
Spirit is just a low coast airline that only flies select days like Thursdays and Sundays to many places and once a day, so if they have a plane issue it causes major issues down the line. They will often just straight up cancel a flight. My wife tried to take it on a Friday night that I drove to on Thursday, and the flight was canceled so she had to drive down the following morning (didn't want to drive overnight as flight was like 8pm). But if it works out it could be great. If you are taking spirit, just understand this and I wouldn't book anything you can't cancel.

Not sure you are flying from to Orlando but Southwest is our airline of choice from New Orleans to Orlando. I have a 9 and 7 year old

I meant that I didn't look at any Orlando theme parks/attractions for one day tickets. I linked to Orlando, not WDW specifically. She might find what she wants to do based on what they offer there.
The Entertainment Book might be another option. I've never used it but I know lots of people do when in Orlando.
