I love both but think Hill Country just based on more options in a one hour radius
Love that are to float the rivers and go out to Canyon Lake, San Antonio, Fredericksburg, Austin
If you have kids, a few things they will like:
Aquarena Springs- San Marcos
San Marcos River
Comal River
Wonder World- San Marcos
Enchanted Rock- Fredericksburg
Hamilton Pool- Austin area(west)
Natural Bridge Caverns- Outside of San Antonio
Snake Farm- Outside of New Braunfels

A good friend of mine has several B&B's in Fredericksburg TX if anyone is interested:

I've been to this one and its awesome. Close to main street and has a hot tub out back.
