Update:

Had the surgery the Friday before Memorial Day. The recovery wasn't that bad. They removed the tonsils and did the UPPP procedure. I was back to work the next Wednesday. The pain was bearable. Not really painful by itself, just when trying to swallow. Lots of smoothies, Jell-O, and a ton of water. Anything too cold hurt so I had mostly tap water with a couple of ice cubes. Any more and it stayed too cold.

Had a 1 week post op check last Friday and the ENT said I was doing great, better than expected at that point. My wife says I still have a slight snore, but I also still have swelling and a bunch of stitches back there. I'm sleeping great. I go back in 2 weeks for another check and then I'll schedule another sleep study after that. So far, none of the issues I was having before as far as the gagging in the mornings and dry mouth.
