You know, I kind of have the same kind of question about file. In gumbo, I don't really notice any thickening, unless you put in a ridiculous amount. And what is the flavor that it adds?

I have had a crawfish dish from the "Pie Man" in New Orleans that has a mystery flavor. I suspect it might be file.

This is how we had it growing up. Don't know if it makes a real difference but it does seem to taste better.
