My wife and I take a similar approach. It's cheaper and overall healthier. As the poster above mentioned, the amount of chemicals used to "clean" meat in the mass produced meat plants is very uncomfortable. I know this not from some biased Netflix documentary but industry knowledge. However, I am excited with the rise in availability to buy affordable meat straight from farmers.
As for recipes, we will make salads containing a combination of any of the following ingredients: black beans, chick peas, quinoa, carrots, beets, oranges, occasionally tofu, and various nuts.

My biggest issue is I hate beans. I think I could do vegan if I didn't hate the texture.
But taco salads minus the meat are very tasty and filling. Sweet potatos with peanut butter or sriacha. Baked potatos with broccoli. Veggie stir fry.
