We raised a few calves to butcher when I was a kid and the ones we slaughtered right off of grass were ok for hamburger even though you had to add fat sometimes and the steaks were grass fed steaks. That is about the best you can say about them.

Those that we let into the barn to eat grain were always better. You take a 1100 or 1200 lb European breed (hereford and angus finish smaller than those with brahma blood was our experience) steer fed for a month or two a heavy grain diet to slaughter and you got some good beef.

You got to really like to cook hamburger and roast and round steak and such to buy a whole beef or even a side.
