Not looking to sidetrack this thread but gotta ask since Im heading to Vegas in January.
Which restaurants do you recommend? I'm staying at the Bellagio and looked on Yelp and was considering Mon Ami Gabi. Looking for one (maybe 2) fancy dinners and a couple of nice lunch/brunch spots. Was considering a buffet but your post almost talked me out of one.

It depends.
I used to live in Las Vegas so I have a different approach when I visit. I have a rent car. Will you have a rent car?
For me I usually just hit up all my favorite hole in the wall spots. I don't spend a lot of money on food. That doesn't mean there aren't good places on and around Las Vegas Blvd., it just means that I know I can get good food at a low price off the strip, I just have to drive there.
That being said there are places on the Strip that offer unique experiences, Mon Ami Gabi being one, because you get to sit right across from the Bellagio Fountains. If you go there I recommend going for breakfast. Not brunch, but breakfast.
You will laugh but the best steakhouse is the one at Circus Circus. The place at the top of the Stratosphere is also good.
I still recommend going to a buffet at least once. I even went to a buffet last time I was there, I went to the one at The M. The M is a ways out though and you need a rent car or be prepared to pay for a cab or Uber. If you go to a buffet though I think its best to go for seafood nights. It's a little more expensive but worth it. You can get the seafood buffet at Rio at any time.
If you have a rent car my favorite place to eat in all of Las Vegas is a wing place on Sunset Blvd. called "The Chicken Shack". It's a hole in the wall wing joint that has my favorite wings of anywhere. Plus their fries are good too, and its cheap.
Napoli Pizzeria has a carry out special, $8 or $9 for a 16 inch large one topping. Their pizza is pretty damn good for that price.
Lastly there is a place South of Mandalay Bay called Skinny Fats that is good and not too expensive either.
