Gouter, Overpass Merchant, Roux 61

I know these places aren't that similar, but wanting to try one of the newer places. Was leaning towards Gouter, but also maybe thinking of something closer (Highland/Airline area) any other rec's?

Depends what you want.
I prefer Overpass to Gouter. Gouter has been hit and miss for me - although it is still in the rotation. Overpass has a great beer selection as well, which is a plus, and I prefer the ambiance. And Roux 61 is fantastic if you have a hankering for mediocre cajun food.

Yes and we love the food. But its more for a sit down dinner with friends and drinks.

Gouter overall was great, but there was one dish we did not like. Still it was a good experience. Overpass is a cool spot I visit probably every other week, but the menu is limited and it has been hit or miss. The burger is nothing like Curbside/Barcadia. Roux 61 was really good to me, but I admittedly never eat that kind of food. Seems like the kind of place that is always on a wait too.

I go to Gouter and Overpass frequently. Just depends on what kind of mood I'm in.

The fat back or back fat, something like that. I was expecting a cracklin type of dish, but it was mushy fat cut into 5 bites. Gouter was great, definitely try it, but another thing we didn't like was the outdated 80s style of plating where the sauces are just dotted all over the plates so you don't really get any of it. I can see a lot of Restaurant IPO qualities in Gouter.

Everyone keeps saying that. Maybe I had a bad burger, but the one I had was so bland.

Both time I had it, it was bland. Curbside and Barcadia were not like that, so I'm not sure what changed.

Beer selection at Overpass bumps it up over Gouter for me. I like Gouter, just wish they'd step their beer game up.

I'm guessing that with the Curbside brick and mortar in the plans, Nick Hufft didn't want to have his signature hamburger available at Overpass Merchant as well. I can't imagine that the goal when he built the menu for Overpass Merchant was to have identical items to what he was planning to offer at Curbside or even the same general philosophy about the menu.
I always got the impression that the Overpass Merchant's idea was "I'm going to give you more upscale bar food than what you might be used to" compared to Curbside's "I'm just going to make burgers, but they're going to be fricking awesome".
I'm a mark for the chicken skins at Overpass Merchant, but I don't imagine I'll find them at Curbside when they open. They're two totally different places.

Depends.
Gouter is more of a group-style place with small plates. If you go with a few people and everyone gets 2-3 small plates and you share, you can have a lovely meal. A bit pricey, but they have some great, really interesting stuff.
Merch is more straightforward and less "upscale", so to speak, but also great.
Never been to Roux 61.

If you're known for making a good burger, I don't know why you'd purposely make bland ones at a place you also own? The menu and concept doesn't have to be the same.

Had the rabbit gumbo and pickled shrimp tacos for lunch a few weeks back at Gouter. Unbelievable.

Gouter is ok...just kinda pricey for the amount of food that you actually get.....
