Doesn't Otis have a recipe for a gumbo for a crowd in the recipe book? Give it a look. Seems I remember him posting something. I know there was another thread on it and I'll try to find it.
Are they serving themselves or will they be served and what are you expecting per bowl-12 oz excluding rice, for example? Other food with it?
