People that lose there cool under stress usually don't make it through the early stages of training to be a pilot. The are a lot of cockpit recordings available of pilots in situations that have the potential to end badly and most did, in all of them the pilots maintained a calm professional demeanor.

Yep. The United Express crash in Buffalo a few years back due to icing on the wings was terrible to listen/read. Both panicked and likely could have performed some controlled landing that would have been less devastating.
