I'd taste them. Not too keen about the chunks of potatoes in them. I didn't catch whether those were pre-cooked potatoes or not. I would boil them in a little crab boil before including them.

REEEEEmoulade sauce.

The old cookbook from one of the early chefs at the Grill Room has a recipe for fried crawfish tails with crab boil in the batter. They're quite good.
