For Jews, the reason why dairy and meat are not supposed to be eaten in the same dish was simply because both were luxuries. It was considered wasteful. It was a means of stretching resources.

Using seperate dishes for raw meats and cooked food? That's just common sense in a world without modern disinfectants to prevent cross contamination and salmonella.

Kosher and Halal certifications? The rabbis and imams aren't just "blessing" the meat, they're actually inspecting it. Rabbis were the first public health inspectors.

All of the old Jewish and Muslim dietary laws were actually very common-sense measures outlining how to survive in a desert climate without modern anti-bacterial soaps, detergents, and refridgeration.
This also makes sense when you consider that the Middle East was mostly desert, and that raising pigs likely requires more resources than raising chickens. I imagine that chickens, sheep, and goats are more efficient animals than pigs. But I could be wrong about that.
