They have specific dishes that you don't find anywhere else, like poutine that you mentioned. Every pub in Quebec has Prince Edward Island mussels and fries which I destroy when I'm there. They're also known for their game meats like bison and elk. The most popular dessert is maple syrup pie, which is sort of like pecan pie without the pecans. They produce good ice wine too, so yes, I can see a cuisine theme.
