Jamaican would work well in Baton Rouge. Lots of rice, beans, gravies/stews, flavor, and spice.

Korean BBQ.

Jewish Deli.

Peruvian Rotisserie.

I think a big problem in Baton Rouge is that not everyone is as open minded as the posters on this board when it comes to food. As such, when someone tries to open a spot introducing a new cuisine to the market, it can't be mediocre. It can't be as good as other options in town. It has to be BETTER than other options in town. Novelty alone won't do it, that's why some have failed.
