It might just be making more engine noise from loading up but really not speeding up hardly any. You'd need a tach to really tell.

I'd have buy an aluminum prop just for the sake of having the plastic for a spare. If you pick up speed, great. If not, you have a spare prop.

Plus, I don't think the OP is gonna get that canoe on plane with a 2.5 hp motor, irrespective of the prop composition (unless he has a heck of a tailwind).

I'd just stand pat. Having a spare prop for a canoe isn't a big of a deal. If you run across a problem where your prop is no longer good, paddle back. If for some reason you feel the need for a spare, just buy another plastic one for $15. You're not going to get 25% more speed out of an aluminum, if you get anything at all. Put that money towards a new cooler or rod and reel.
