Red Beans & Grits (update w/ picture in OP)

On a whim, I made a pot of red beans at work today. I didn't find any rice, so I cooked a pot of grits.

It is very GOOD, I think better than rice. When the bean juice gets down into the grits, it works well.

My days of cooking red beans & rice may be over.

The next day, I re-heated it back up, made another pot of grits. Yesterday, when I cooked the beans, I also cooked some chicken tenders in a black iron skillet. When I put the beans away, I simply put the rest of the chicken in the beans. That's what you see in this picture.

Makes sense. I eat mine over cornbread. Both corn products.

I like grits and I like beans, so, it's gotta be good!
