It's been more than ten years since I've been to RMNP, but I remember enjoying the hike past Bear Lake to Emerald Lake.
Emerald Lake hike, easy 3.5 miles
And the Mills Lake hike was a bit longer, but my favorite.
Mills Lake- about 5 miles, gorgeous
Leave early-ish, pack a lunch, and have a picnic by the lake when you get there. Stunning.
I think both of those hikes can be done by beginners.
(When we went in early June many years ago, there was still a good bit of snow up around Emerald Lake. Just FYI. Can't remember when you said you were going.)

The emerald lake hike is very easy. There's a number of trails from Bear's Lake.
