Yes. The texture obviously changes. You can freeze in water or olive oil. Most suggestions are to freeze in olive oil ice cubes. Some herbs can be dried and crumbled for future use.
Sometimes, I grind fresh rosemary, put it in a ziplock bag in the fridge and use it from there.
If you have a lot of basil, you can make pesto and freeze that.
