I've done Pioneer Woman's drip roast in the crock pot for sandwiches and it's quite good.

Other than beef or pork roast, I can't think of much I've cooked in the crock pot other than some stocks. I tried crock pot French onion soup recently and it was pretty good, though I think when I doubled the recipe, it may have been too many onions for them to actually caramelize as the recipe indicated they would. The flavor from them was quite good in the soup, though. I had to turn it up to high for a while to get them to brown more, though.
