I'm not a doctor, but I'd start at the fact that one was in zero gravity for 340 days and the other was living on Earth. I'd find it hard to believe that his twin on Earth was subjected to the same diet as his astronaut brother was, but still.

They will get a great study on bone loss, the #1 problem of long-term spaceflight.

I'm not sure - his brother was also an astronaut, so volunteering to eat the same foods that his brother ate on the ISS isn't hard to imagine. May not be an astronaut but still a scientist, and almost certainly willing to participate.
