1/2 tsp each of black, white, green, & pink peppercorns.
1 tsp fennel seeds
1 green cardamom pod
1 star anise seed pod
1 tsp coriander seeds
1/4 cup salt
Brown sugar
Toast all spices and grind to a fine powder. Blend with salt. Add Brown sugar to your preferred level of sweetness.
Cure 2-4 hours if searing/ grilling. Cure +12 hours for smoking.
