You are going to shitty places if that is the case. Good sushi rice is full of flavor and complements the subtlety of the fish very well. Soy is not suppsoed to touch the rice. You should very lightly paint the fish with soy. And the wasabi should be added by the chef when making. At nicer sushi bars the chef will also paint the soy on and there will be no soy on the bar for you to supplement.

Yeah, you're talking about really high end places then. You aren't going to find many places like that in the entire state of Louisiana.
