Apparently Nick Saban will have a huge hand in hiring his successor per BOL. His favorite all time assistants per other former assistants are Jimbo Fisher and Will Muschamp.

Lordy I hope it's the former if it comes to pass

Depends on how/when he leaves. If he retires after a championship, absolutely. If he gives NFL another shot? Nah. He'll not have much input.

If Nick takes an NFL job, he's not going to have time to recruit his successor. That being said, keep in mind that he thought Houston Nutt would be a good replacement for him when he left LSU

He wanted Houston Nutt to take over after he left LSU. I'm sure he'd be available to run the tide.
