I keep serranos and jalapeños in the freezer. When I stuff a roast with them, the peppercicles (cut lengthwise) insert very nicely.

I lay mine on the kitchen counter and just leave them there till they dry out. May turn them over once or twice. Takes a few weeks but works great. Then I just break them up with my fingers when its time to use during cooking. Works great. I have some that I smoked first as well. I have a dehydrator but don't really need it.
