Drying peppers, info needed...

my dad brought me about a half gallon of mixed peppers from his garden that is still producing. I think they are cayennes and maybe a few serranos.. was thinking about drying them. i'm assuming i can do that in the oven?

Smoke then on your grill for a bit, and then low and slow in your oven for a long long time. Crush in a coffee grinder or food processor. That's how I do mine.

Are you drying them to ground into a powder?

You can roast them then pack in a mason jar or even ziplock and cover with oil. They will keep a long time and infuse the oil.

I keep serranos and jalapeños in the freezer. When I stuff a roast with them, the peppercicles (cut lengthwise) insert very nicely.
